Cedar Plank Halibut
Thanks to Gil Meacham for this recipe (and samples served on a great camping trip!)
Ingredients:
1 halibut filet cut at least 1 inch thick. (about 1/2 pound for 2 people)
1 small lemon
1/2 cup sweet white onion (sliced as thin as you can)
1 clove garlic (chopped as small as you can)
2 tablespoon sorrento, red, or green pepper (chopped fine)
1/4 cup olive oil (extra virgin is best for this)
dash paprika (to taste)
1/4 lb. parmesan cheese (grind it fresh)
Preparation:
Soak the plank in water for at least 30 minutes if cooking on a grill (not
needed if cooking in conventional oven).
Put the plank on the grill with the smoothest side up.
Let the plank heat for about 15 minutes.
Meanwhile:
Mix together a baste of the oil, the juice from the lemon, the onion,
garlic, peppers, and paprika.
Put the halibut on the plank.
Cover fish with the baste. Keep the onions, pepper, and garlic on top of the meat.
After 10 minutes, shred the parmesan cheese over the top of the meat to
cover it. 3 to 5 minutes later, the fish should be flaky.
Serve and enjoy!
