Enchilada Casserole #1

2 or 3 (10 oz) cans enchilada sauce

flour tortillas

cooked chicken or turkey (smoked turkey is good)

1 jar roasted red bell peppers

1 can vegetarian refried beans

sliced black olives

sliced green onions

shredded Monterey Jack cheese

shredded cheddar cheese

Use a large glass or ceramic casserole baking dish. In each tortilla place a line of refried beans. Lay strips of chicken or turkey on top of the refried beans. Lay thin strips of roasted red bell pepper on refried beans. Sprinkle with small amount of onions and olives. Sprinkle with Monterey Jack and cheddar cheese. Roll up the tortilla and place in pan. Continue with other tortillas until pan is covered with a layer of tortillas. Pour on enchilada sauce until covered.

Cover with foil and bake at 350 F for 45 to 55 minutes.
